METHOD
- Pre-heat oven to 250 degrees F
- Add brandy, raisins, currants, mixed fruit, chopped dates, cinnamon, nutmeg, and dried orange peel to a saucepan and boil vigorously until most of the brandy has evaporate. Set aside.
- Cream the butter, brown sugar, and molasses together.
- Add the three eggs and beat until homogeneous
- Add the fruit and mix thoroughly.
- Melt the chocolate in the microwave (or in a glass bowl over boiling water) and add to the mixture. Mix thoroughly.
- Add flour and beat mixture. Do NOT add baking powder
- Line a round cake tin with baking parchment, pour in mixture (it’s very thick) and spread out to edge of tin
- Bake for 1.5 hours at 250 degrees F. Check by piercing with a sharp knife. It should come out clean. If it doesn’t, return to the oven for another 10 to 20 minutes

Ingredients
Flour (3/4c), sugar (3/4c), eggs (5 large), Cornstarch (1/3c), vanilla (1tbsp), salt (a pinch), whip cream, diced mangoes, (2c), icing sugar.
Fresh fruit glazed in sugar syrup:- Berries, orange with skin, strawberries, apricots, kiwi.
Method of preparation:-
First heat the oven to 175 degrees C. take a pan of 9-inch, grease it. Take a bowl, beat eggs in it until they get double the volume and fluffy. Then add vanilla and sugar in it and beat it. Sieve flour and salt and add into the egg mixture. Mix it well until it gets mixed. Then pour this mixture into the pan and place the pan in oven and bake it for about 30 to 45 minutes at 175 degrees C. take out the pan from oven and cool it completely. Cut the cake in halve, place one half of cake on board. Take a bowl, beat cream and icing sugar in it and spread 3 tablespoon of it on cake and then place layer of diced mangoes. Place the other half of cake on top and spread the cream on top and sides of cake. Place the fresh fruits on top and then sprinkle some icing sugar on it. Now the cake is ready to serve.
